S'Mores Cupcakes

First off...I LOVE S'Mores. I love them. I like to eat them all year long. When we lived in a cooler climate I loved to make a big giant camp fire in our portable fire pit and roast marshmallows. We would make the usual S'more with graham cracker, Hershey bar and marshmallow. Sometimes we used peanut butter cups. Once we used peppermint patties. I don't recommend that choice of candy. We've used Nilla wafers, and when desperate, Ritz crackers.
I'll post the how to's for this recipe on this blog soon. Tonight isn't good for me to do all of that.
First off I made a chocolate concoction and it worked perfectly. It thickened and melted exactly as it should. Because I'm still learning my stove, it has dual burners that get pretty hot, pretty quick, I was a teeny afraid I'd burn this...but all was fine.

My daughter LOVES to cook with me. She's only 2, so the help she likes to give is limited. She really enjoys watching the mixer spin. Sometimes she thinks about putting her perfect little fingers in there, but luckily hasn't acted upon that thought.


I didn't have graham cracker crumbs, so I made some myself. Pretty easy really...grab a handful of the yummy crackers, stick them in a ziplock and roll them with a rolling pin.

I just love watching that mixer do it's job.

Mixing in the dry with the wet. It was pretty wet. More like a thick soup. I wasn't sure if doubling the recipe was a good idea at this point. Maybe I had an ingredient off or something. I wouldn't think it'd be a problem. Especially since I wanted more than only 12 cupcakes.

She really started helping at this point.

Sure enough the batter was too wet. I added another cup of flour.
Double a recipe for 12, you should get 24 right? Somehow I got 39 cupcakes out of it.

Mixing the marshmallow frosting was the most fun. It wasn't too sticky...or too messy...but it was gooey!

After cutting a hole..the recipe called for 'the wedge method' which I didn't know what that was or really feel like looking it up...I just bored out a hole in each cupcake and then plopped some chocolate frosting on that hole. It worked. Because it was 90* in Kapolei the day I made these I had to refrigerate the frostings and cupcakes inbetween each addition.
After mixing the fun gooey marshmallow frosting I got to dollup it on the cupcakes. WHAT FUN! It wasn't to runny, or too thick...just perfect stickyness.

OVERALL
EASE to prepare - 3 - kinda hard - only because there are 3 different recipes to follow and there was some adjustments that needed made.

Yumminess to the adult palate - 4 - only because I don't really enjoy frosting...but this does have good frosting, it doesn't have that bite to it that some frostings can get. I think that is from too much powdered sugar..but really don't know.

Yumminess to the pediatric palate - 5- My kids LOVE these. Even my extreme ultra picky 2yo enjoyed eating this cupcake. She did paint her belly with the frosting, as usual.
